Garlic Cheese Chicken Roll-Ups
The 2 Week Diet
  • 4 boneless, skinless chicken breast cutlets (thin-that amounts to about 1 lb. or so)
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons butter, melted
  • about 3 oz. garlic cheese spread (I used the wedges from The Laughing Cow–whom I do not endorse, yadda yadda. You can substitute and play with this part of the recipe)
  • In a shallow bowl/dish mix breadcrumbs and Parmesan.
  • Dip 1 side of chicken in melted butter and then the breadcrumb mixture.
  • On bare side of chicken, smear garlic cheese on each end (and some in the middle if you want…use your judgement)
  • Roll up each chicken breast and secure with toothpick(s)
  • Place roll-ups in greased 9 x 13 baking dish and drizzle with any remaining butter.
  • Bake in a 350 degree preheated oven for 35 minutes.
